Our newest offering is a single-estate coffee of the coveted Ají variety from producer Dairo Rojas Salazar. This rare variety was discovered by his neighbor only a few years ago, making it a recent development within the world of coffee and a genetic mystery of how it arrived to Colombia from Ethiopia, the birthplace of coffee. Named after the Spanish word for chili pepper, the Ají variety is characterized by its unusually spicy coffee cherries in both aroma and flavor, leaving producers puzzled to this day about the cause of this unique trait.
La Esperanza Ají, named for the district where Dairo’s farm is located, is an extremely vibrant and bright coffee, with a predominant note of blood orange and aromatic herbs like lemongrass, and a sweet juiciness like ripe mulberries.
